a recipe and some other stuff

I love fall so much!  The crisp air, soup, sweaters, yummy smells are all giving me a little bit of love right now.  I found this recipe for the best pumpkin apple bread a few years ago.  I wish I knew the source, but I can't remember what I wore yesterday, so....
The apples and raisins make this incredibly moist.  This is a great one to let your little ones help you with.  Parker LOVES to help me in the kitchen, so this is always a sweet little time for us.  Hope you enjoy!  I needed muffins for his class and a few smaller loaves for thank you's so I split mine up a little differently this time.






Pumpkin Apple Bread (this will make 2 loaves)

3 cups flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 cups sugar
1 can (15 oz) pumpkin
4 eggs
1 cup vegetable or olive oil
1/2 cup water
2 apples, peeled and diced (can put them in food processor)
1 cup golden raisins (optional)

Preheat oven to 350 degrees.  Combine flour, cinnamon, baking soda, and salt in one bowl.  Combine pumpkin, eggs, oil, sugar, and water in another bowl and mix until smooth.  Combine contents of two bowls.  Stir in apples and raisins.  Pour into two greased/floured bread loaf pans (9-10 in.)  Bake for 1 hour and 15 minutes.  (It takes a little less time in my oven.  When the sides start to pull away from the pan and a toothpick comes out clean, it's ready.)

I picked Grey up from Sunday school a few weeks ago and he was wearing this crown.  He was so proud of it, even if he tore it into the tiniest pieces you've ever seen just minutes after this picture.  Have you told your little ones that they are deeply loved by God lately?  Do they know they are a son of a KING??

Last Wednesday was "walk to school day", so the boys and I walked and just look at this beautiful sight!  

This made me laugh!  Grey had Elmo with him at the table one morning during breakfast and "fed" him some yogurt.  As exhausting as it is being the mama of a 2 year old, it is equally as fun... 

Parker is still writing messages on the mirror for us.  This  one has the alphabet written in the middle of all his I love you's.

I went to Lake City in the middle of September with JT.  My dad was there and we went on some wonderful trail rides.  I need to write about it... See that pretty orange leaf?  And that beautiful waterfall?  How could anyone not be refreshed by  some time in the mountains??


A few nights after we changed Grey's crib into a toddler bed,  he went in Parker's room in the middle of the night.  P laid on the floor with him and got him a blanket until he fell asleep, then got back in his own bed.  Now, at least 3 days a week, this is what I find in the mornings...   precious and PITIFUL all at the same time!

We went to our little pumpkin patch that we go to every year a couple of weeks ago.  This boy loved riding in that wagon with his bubba pushing him.  Now, when we drive by there everyday, Grey tells me the story of how he rode in the wagon and carried the big pumpkin and his bubba pushed him and they went down the big hill.
